Euskal sukaldaritza berriaren sorrerara jo behar dugu hori ulertzeko.<!--more--><\/p>\n<p>1980an <em>Zeruko<\/em> izateari utzi eta ARGIA bihurtzeko fasean zen astekaria, eta itolarrian bizi zen diru-faltagatik. Testuinguru horretan eskaini zuten euskal sukaldaritza berriaren bultzatzaile ziren sukaldari ezagunek (Arzak, Argi\u00f1ano, Subijana, Roteta\u2026) Balda pilotalekuko bazkaria, musu-truk eta euskaltzale boluntario talde zabalak lagunduta.<\/p>\n<p>Ordurako ARGIAko kideek harreman estua zuten sukaldari horiekin. \u00a0Oso gertukoa zuten Juanjo Landa produktorearen eta bere adiskide Karlos Argi\u00f1anoren bidez hasi ziren beste sukaldaritza mota bat sortzen ari zirenekin elkartzen.<\/p>\n<p><a href=\"https:\/\/blogak.argia.eus\/urko-apaolaza\/wp-content\/uploads\/sites\/21\/2014\/11\/errezeta.jpg\" data-rel=\"lightbox-image-1\" data-rl_title=\"\" data-rl_caption=\"\" title=\"\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright  wp-image-1947\" alt=\"errezeta\" src=\"https:\/\/blogak.argia.eus\/urko-apaolaza\/wp-content\/uploads\/sites\/21\/2014\/11\/errezeta-718x1024.jpg\" width=\"259\" height=\"368\" \/><\/a>Euskal Sukaldaritza Berria deitua 1970eko hamarkadaren erdialdean sortu zen. Arzakek eta beste kideek ezinbesteko ikusi zuten mugimendu berri horretan euskal kulturaren ezaugarriak txertatzea. Edukiak landu eta sormena sustatze aldera hainbat astez behin afaria antolatzen zuten kultura eta komunikazioaren arloko eragileekin. Argiak presentzia handia izan zuen horietan.<\/p>\n<p>Joxemi Zumalabe zenaren <a href=\"http:\/\/armiarma.com\/joxemi\/itzal\/luzea05.htm\" target=\"_blank\" rel=\"noopener\"><i>Ipurtargiaren Itzal Luzea<\/i> biografian<\/a> Lorea Agirrek zera jaso zuen Arzaken ahotik: \u201cAsko lagundu gintuen sukaldaritzaren oinarri kulturalak ezartzen, zentzua ematen, oinarri teorikoak jartzen guk intuitzen genuen mundu horri guztiari (\u2026) Eta horri zor zaio gure egitasmoa aurrera atera izana, zeren, beste leku askotan saiatu arren, huts egin zuen\u201d.<\/p>\n<p>Elkarlan horren ondorioz, ARGIAn denbora batez sukaldaritza orrialde bat argitaratu zen, errezeta eta tendentzia berriekin. Karlos Argi\u00f1anok sinatuta zeuden, Zumalabek berak egindako marrazkiz atonduta.<\/p>\n<p>Euskal sukaldaritza mundu mailan puntako izatera eraman zuen mugimenduko kideek, garai haietako ekitaldien artean 1980ko Baldako bazkaria nabarmendu izan dute. Sukaldaritzak berriak euskal kulturaren \u00a0eta euskararen alde erakutsitako konpromisoaren adierazle izan zela diote. Ez da harritzekoa beraz Arzakek, orain, minutu eta erdiko bideo-biografian, tartetxo bat egin nahi izatea, \u201czoriontsuagoa naiz aldamenekoak zoriontsu egiten ditudanean\u201d esaten duen bitartean.<\/p>\n<p style=\"text-align: center\"><a href=\"https:\/\/blogak.argia.eus\/urko-apaolaza\/wp-content\/uploads\/sites\/21\/2014\/11\/7-1000_bazkari.jpg\" data-rel=\"lightbox-image-2\" data-rl_title=\"\" data-rl_caption=\"\" title=\"\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-1951\" alt=\"7-1000_bazkari\" src=\"https:\/\/blogak.argia.eus\/urko-apaolaza\/wp-content\/uploads\/sites\/21\/2014\/11\/7-1000_bazkari-1024x656.jpg\" width=\"581\" height=\"372\" \/><\/a><\/p>\n<p style=\"text-align: left\">Garai haietan ARGIAn aritzen zen Joxe Mari Ostolaza, bazkari hartako logistikaz arduratu zen. Gogoan du egun horretan Orioko arraunlariek Kontxako estropada irabazi zutela eta pilotalekuan azaldu zirela ospatzera.<\/p>\n<p>Horien artean zegoen Javier Puertas, arraunlari saga ezagunaren aita, munduko txapeldun izandakoa, besteak beste.
